Every chef has a story, and Andrew Stansbie’s is one that spans continents, luxury hotels, and even royalty.
His passion for food began in England, where he graduated from culinary college and launched his career at the prestigious 5-star Marine Hotel in Devon. From there, he quickly moved into senior roles at renowned establishments, including the Palace Hotel in Manchester, solidifying his reputation for culinary excellence.
Andrew’s career has taken him far beyond the UK. His global experience includes time aboard luxury Seabourne yachts and in acclaimed kitchens across Dubai, Saint Lucia, New Orleans, Estonia, Turkey, and Azerbaijan. Along the way, he worked at Michelin two-star level restaurants and had the extraordinary opportunity to cook for royalty -an experience few chefs can claim.
But for Andrew, these milestones, while meaningful, aren’t the heart of his story. What he values most is the chance to mentor the next generation of chefs and to collaborate with local farmers and producers. Supporting local communities and celebrating regional ingredients are central to his philosophy.
Today, Andrew and his wife, Merili, call Warrnambool home. At Tides Café, Bar & Restaurant, he combines his international expertise with a deep respect for local produce and community. Every dish that leaves his kitchen reflects not only his technical skill but also his passion for quality, creativity, and connection.
